This is a Chilean staple that is very quick and easy to make. The tomatoes do a great job of canceling out the stoutness of the onions. Fresh vegetables make it even better.
5 large tomatoes
2 medium onions
2 tbsp olive oil
2 tbsp chopped cilantro

Slice tomatoes and onions into thin wedges. Place into serving bowl.

Drizzle with olive oil, add chopped cilantro and stir

Add salt and pepper (preferable fresh ground pepper) to taste if desired.

To allow the flavors to better combine, allow at least 15 minutes before serving.
